Cauliflower Greens, Bunch


8 Oz bunch of giant greens that are delicious and super healthy.


How to cook:

 If you like them a bit chewy with a crunchy stem (like bok choy) then sautee them with onion, garlic, peppers, chorizo or sausage (or not!) and a little butter. Cook just until they soften a bit. Doesn't take long.


If you want them softer, more like a collard green, then braise them for 30-45 minutes. How to braise: Saute onions and garlic until golden brown, add in the cauliflower greens, salt, pepper and a dash of vinegar. Add a cup of chicken or vegetable stock then cover, reduce temp to low and simmer for 30-45 minutes, stirring every ten minutes.
