Ingredients
Serves 4
From the Market
1 bag mixed gem lettuce
1 bunch sprouting cauliflower
2–3 carrots
4–6 radishes
1 pint sugar snap peas
Goat feta
Grain mustard vinaigrette
Olive oil
Salt and freshly cracked black pepper
Instructions
1. Prepare the Vegetables
Trim the sprouting cauliflower into bite-sized pieces.
Cut the carrots in half lengthwise.
Drizzle both with olive oil and season with salt and pepper.
2. Grill the Vegetables
Preheat grill to medium-high heat.
Place cauliflower and carrots on the grill.
Cook for approximately 5–6 minutes, turning occasionally, until lightly charred and tender.
Remove from grill and allow to cool slightly.
3. Prepare the Fresh Vegetables
Thinly slice the radishes.
Slice the snap peas into bite-sized pieces.
Roughly chop the grilled cauliflower and carrots.
4. Assemble the Salad
Place mixed gem lettuce in a large bowl.
Add:
Radishes
Snap peas
Grilled cauliflower
Grilled carrots
Toss with grain mustard vinaigrette.
Transfer to a serving platter or bowl.
Finish with crumbled goat feta.
