Get a pan (preferably cast iron) ripping hot. Add peppers to dry pan (no oil yet).
Rotate Peppers to make sure they are evenly charred. Once both side of peppers are charred drizzle olive oil over them, toss around in pan. Cook for 30 seconds. Remove from heat and generously salt.
You can also do this on a really hot grills.
Shishito peppers are not hot! Occasionally you get one with a mild heat. Delicious as a side dish or snack. We serve them at almost every meal all summer long.
