Burnt Cardamom Carrots

  • 6-7 carrots, cut carrot in half then on bias into 2 inch chunks

  • 2 tablespoons olive oil

  • salt and pepper to taste

  • 1/2 teaspoon cardamom

Optional: Goat cheese and baby arugula


Step 1: Preheat oven to 500 degrees

Step 2: Toss carrots with olive oil, salt, pepper and cardamom. Use your hands to evenly distribute.

Step 3: Lay out on sheet pan (no aluminum foil!) 

Step 4: Cook in oven for 12-15 minutes until a heavy carmelization on bottom of carrot.

Step 5: Eat as is or toss with goat cheese and baby arugula
